"Last Chance U" at Independence Community College
Following his departure from Florida State, Henry landed at Independence Community College (ICC) in Kansas. His time at ICC was documented on the Netflix series "Last Chance U," which captured the challenges and triumphs of the football program under head coach Jason Brown.
At Independence, Henry faced numerous obstacles. Coach Brown described Henry's football IQ as exceptional but noted that talent alone wasn't enough. Brown had to suspend Henry multiple times for missing class and butted heads with him over playcalling. Despite these challenges, Brown recognized Henry's potential, stating, "He’s come night and day since January. I’ve nearly cut him 20 times. I’ve suspended him. I’ve done it all."
Frank Diaz, the Independence quarterback coach, played a crucial role in helping Henry navigate his personal and academic struggles. Diaz, who wasn't paid for his job, provided guidance and encouragement, helping Henry address his frustrations and disappointments. Henry admitted that he was "pissed off" about being at ICC and "mad at myself for being in this situation for having to come to juco."

Nevada Wolf Pack
In December, Henry walked on at the University of Nevada, providing him with a chance to return to Division I football. During his three games for the Nevada Wolf Pack, he made two starts and threw for 593 yards with a touchdown, completing 53.8 percent of his passes. He notched a career high of 352 yards through the air against the San Jose State Spartans, including a 75-yard pass for the Pack's longest play of the year.
Henry entered the season in a three-player race for Nevada's starting job. After injuries to other players, Henry got his first college start. In his first FBS start, Henry led the Wolf Pack to a thrilling 41-38 victory over San Jose State. The next week, Henry started against Utah State but struggled. In 2022, he continued his career with the Jacksonville Sharks of the National Arena League (NAL). In 2023, Henry joined the Carolina Cobras, where he led the league in passing yards (3,116) and passing touchdowns (60), setting an NAL record with 10 touchdown passes in a game against the West Texas Warbirds.
On January 26, 2024, Henry signed with the Edmonton Elks of the Canadian Football League (CFL). However, he was later released during final cuts. In March 2025, Henry signed with the San Antonio Gunslingers of the Indoor Football League (IFL). In May 2025, Henry signed with the Billings Outlaws of Arena Football One (AF1).
